Canned pineapple, canned corn, and processed ham—pizza toppings can be many things, but for the love of God, let’s not make them those three.

As with anything else, input equals output. And that goes for pizza toppings too. The better the ingredients you use, the better the result you’ll get.

Pizza, broadly speaking, consists of two main elements: the pizza dough and the toppings.

Here, we’re going to talk a bit about the latter. Because of course, the toppings you choose for your pizza make all the difference.

INGREDIENTS AND FLAVOR

When choosing pizza toppings, it’s no secret that fresh ingredients often pack more flavor than canned products. It’s also best to use seasonal ingredients whenever possible. That said, it’s now nearly always possible to get ripe produce from around the world, no matter the season. It might weigh a bit on your climate conscience, but it also opens up new possibilities.

As for canned products, let’s not forget that they’re a method of preservation. And thank goodness for that—otherwise, we wouldn’t have many pizzas with tomato sauce here in chilly Denmark. Tomatoes are actually one of the ingredients we at Pico Pizza also use in preserved form. Without Italian summer tomatoes, pizza sauce in January wouldn’t taste like much at all.

Beyond starting with fresh ingredients, it’s all about combining flavors in the right way.

TOPPINGS AT PICO PIZZA

At Pico Pizza, we have one word we always come back to when creating new pizzas: balance. We work with the five basic tastes—sweet, salty, sour, bitter, and umami. It’s incredibly important that the flavors on a pizza are in harmony. Nothing should be too sweet, salty, or overly dominant in any other way. The flavors we choose must complement each other so everything comes together as a greater whole.

Texture is just as important. Some elements should be soft, some crispy, some rich. Keep that in mind when experimenting with which ingredients to put on your pizza—both before and after baking.

We also eat with our eyes, so presentation matters. Think about colors and the order in which your toppings go on the pizza.

We use classic Italian pizza toppings, but we also include more modern ingredients like fried capers, lemon pepper, and Merguez sausage. It’s all about being creative and having fun—whether it’s a vegetarian pizza or not.

Be creative and try to challenge what you’d normally do—or what you’ve seen others do.
